Can you buy fresh meat and throw it straight into the freezer? You can, of course. However, this advice can make your life easier the moment you think that you have to cook the meat.
What should be done with meat before freezing? Divide it into portions!
Imagine how much space would be impractically occupied by, for example, a 3 kilogram piece of neck chop. And now imagine: what will you do with those kilograms after tempering? Or will you eat the same thing all week...
Chunking will ensure that:
● meat will freeze more evenly and faster;
● the annealed piece will be used up and will not be left over;
● Also, smaller pieces are more convenient to keep in the freezer, especially if they have to find a place together with other products.
It is also useful to indicate the date on each package, so that you know how long it has been in the freezer, and you can start judging with the one that has been there the longest.
